Belli Siciliani is a little star in his neighborhood, where he is open for years. There are not many such restaurants in Bucharest where you feel like visiting a family, because that was the time when things were going upright and not changing the reflexes and habits so easy, but slowly, it slowly catches this model with us, especially since the world has seen it work – and the customers, but also those who keep them and work in these places. Belli Siciliani is a traditional, popular Italian restaurant of deep Italy and Sicily, as sociologists say. I wrote a few years ago a critical article about them, in which I commended them that they did not strive to evolve, thinking that they would have to learn new things at all times, to go for more sophisticated products and recipes, to study the new techniques and consumption trends in books and the Internet, to make the food more delicate, things out of them. Sure, unable to detach me for a moment of my head-hunter job, in which I see only people who have to learn and do new things every day, evolve and develop permanently, with no stop, no moment to reach the top of the peaks and then stay there for as long as possible. And if they are not careful, or if they stop for a moment, someone immediately comes and takes their place. Yes, that’s right there in the top management, and in the top, in general, only that the Matsarsi Sicilians are not my candidates, I do not think they want to make good dining at Belli Siciliani how I think they should do professional reflex, as I said, without thinking too much. And it took me a while to be able to judge the dual, each with his place and wishes, not everyone wants, nor does it need or need, after all, to go to the MBA, to progress endlessly, until gives his spirit go to the crazy house … So, Belli Siciliani is a popular restaurant, the Italian will not go to the big chef’s MBA, do not make fresh experiments with its products and ingredients and I do not think it will invent new recipes. He seems pleased and proud to do what he has taught little, seeing what others do and doing the same, not from gastronomy computations or from any Accademia della Cucina with taxes as his house on Mătăsari. These things are even clearer to me now, and I went to Belli Siciliani again, without being ready to study the fineness of the sauces, the originality of the recipes, and the names of the menus. This time I was fortunate enough to take over the wife of the Italian patron, a former stewardess at Tarom who was so tired of flying. She showed me all the halls of the little restaurant, which I had no idea I was, besides the small one at the entrance, with three tables. She showed me the cellar with pickles and pickles, recommended me her favorite foods, explained to me how I did them … I took a pizza with artichokes and other pickles, very good, spinach chips and with good urchin, and a good melanchard after you managed to catch it from the oil it was pouring, a surprisingly good home-made sausage. Good homemade bread, lemonade with almonds good bitter and she, sweet coffee less … Sure, I would not have taken five dishes to Belli Siciliani if ​​there was no one to convince me to do that. I would have taken a kind, or at most two, that past passages, and I would have written about them just like past dues. I could not eat half of what came to my little table at Belli Siciliani, but I gave them the money, because I liked them, the Italian mournful that the mistress brought to him and forced him to smile for the picture, the curious waitress. I spoke alone every time I said that any restaurant can double or even triple the day-to-day sales just by choosing what waiters need and how to talk to people. In Bucharest they eat well, whatever would say many who do not know what to compare and measure with. Better than in Vienna, for example, and in many bigger cities and more famous. And as it turns out, the restaurants and cafes in Bucharest are better arranged than those in many capitals, not just in Europe. I’m telling all the strangers with whom I am talking, often amazed. And I talk to them daily, because this is my job, which I have talked about. But the great, huge issue of Bucharest’s restaurants, cafes and pubs in general is staff and services.
